Nicolas Netien is co-founder and Chief Scientific Officer of Oleaphen. He holds the world record for the highest polyphenol concentration ever measured in olive oil and is regularly published in international press on olive oil science, polyphenols, and agroecology. He is a Knight of the Order of Agricultural Merit of the French Republic and an educator in soil biology and regenerative agriculture.

Does Olive Oil Lose Polyphenols After Opening?
Olive oil polyphenols begin degrading the moment a bottle is opened. A 2022 study simulating daily household use measured 12-18 percent total phenolic loss within 30 days. A 2025 study under household light exposure recorded EVOO grade declassification within 28-35 days, with intense rancidity by week eight. How to Tell If Olive Oil Is High in Polyphenols? (4 Things to Check Before Buying)
"High in polyphenols" is not a regulated label, so the burden of verification falls on the buyer. Four checks make it manageable: a certificate from an IOC-accredited lab using HPLC method COI/T.20/Doc No 29 or LC-MS/MS, a peppery throat sensation and bitter finish, an early harvest date, and packaging that prevents oxidation after the first opening. Bottles fail the last check by design.
