Before the Harvest: Preparing for Extreme Conditions

 

This winter brought Cyprus one of its most severe droughts on record. Most water reservoirs across the island remained empty as we approached harvest season.


Our regenerative farming  groves showed remarkable resilience. Deep root systems and healthy soil microbiomes helped these trees not just survive, but concentrate exceptional nutrients in their fruit.


Summer temperatures reached an unprecedented 48°C (118°F), but our trees were ready.

Harvest Week: Innovation Under Pressure

We started each harvest day before dawn to work in the coolest possible conditions, though even September mornings began in the mid-30s°C (mid-90s°F).


Our mobile refrigeration unit moves through each grove, collecting olives directly from the trees. Within minutes of picking, every olive is cooled to optimal storage temperature.


The difference is visible immediately - olives that would typically show stress damage remain vibrant and intact thanks to instant temperature control.


The Petrou, Chrysanthis, Stavrou, and Triffilaris families worked alongside our team, their years of regenerative agriculture experience proving invaluable during this challenging harvest.

Processing: Science Meets Tradition


Our extraction facility maintained precise environmental conditions throughout processing, ensuring that heat-sensitive polyphenols remained intact.


Every step of processing occurred under nitrogen protection, preventing any oxidation that could compromise the oil's exceptional bioactive compound profile.


The first samples showed the brilliant green color and a very stong kick in the back of the throat that signals high polyphenol content - a promising sign after such extreme growing conditions.

Our polyphenol analysis was conducted by the Universidad de Córdoba in Spain using LC-MS/MS (Liquid Chromatography-Tandem Mass Spectrometry).

The NMR Problem

Many olive oil brands use NMR (Nuclear Magnetic Resonance) testing because it produces higher numbers - sometimes inflating polyphenol content significantly. NMR is not an accredited or legal method of polyphenols analysis.
